[00:00.000 -> 00:08.680] Hi there, welcome along to the High Performance Podcast. This is a special episode where we
[00:08.680 -> 00:14.280] have a big announcement because on Monday we will be releasing an episode with a guest
[00:14.280 -> 00:19.800] who we've been looking to get onto high performance for so long. Damien, I think you should be
[00:19.800 -> 00:24.200] the man who has the honour of announcing who it is and also I suppose why we've both been
[00:24.200 -> 00:27.640] so keen to speak to this person. Well let's not keep people waiting any longer
[00:27.640 -> 00:32.160] it's the incredible Gordon Ramsay that's coming on as a guest and we've wanted to
[00:32.160 -> 00:36.000] get him on for a long time but particularly when we interviewed his
[00:36.000 -> 00:41.040] former colleague Marcus Waring. Marcus described really powerfully the effect
[00:41.040 -> 00:47.240] that Gordon had on a whole kitchen where he just lifted everybody's
[00:44.880 -> 00:49.120] standards, he said he was magnetic, you
[00:47.240 -> 00:51.800] couldn't take your eyes off him and he was
[00:49.120 -> 00:53.840] somebody that was just driving the
[00:51.800 -> 00:56.840] culture of the kitchens with Marco Pierre
[00:53.840 -> 00:58.600] White to even higher standards. And it's
[00:56.840 -> 01:00.640] one thing setting a standard right, it's
[00:58.600 -> 01:03.440] another thing entirely setting that
[01:00.640 -> 01:06.280] standard year after year, decade after
[01:03.440 -> 01:06.200] decade and across multiple genres.
[01:06.200 -> 01:10.160] Some people are amazing chefs, some people are amazing TV people.
[01:10.160 -> 01:15.080] He's both of those things, and he brings the same approach to both of those things.
[01:15.080 -> 01:17.720] Now we go into such depth on this podcast.
[01:17.720 -> 01:21.320] Gordon just doesn't speak like this, so I can't wait for you to hear it, and I've got
[01:21.320 -> 01:23.340] some really big news as well.
[01:23.340 -> 01:28.440] The whole episode is live right now on the High Performance app so you don't need
[01:28.440 -> 01:33.220] to wait until Monday if you don't want to and the app is free. All you have to
[01:33.220 -> 01:37.300] do is download the High Performance app from your app store and then use the
[01:37.300 -> 01:43.880] code HPAPP when prompted. That's HP app when prompted and you can hear the
[01:43.880 -> 01:46.800] whole episode. But should we listen to a taster of it now?
[01:46.800 -> 01:49.760] All right, then. Here's a little clip.
[01:49.760 -> 01:56.040] Did you love the idea of arriving green behind the gills, inexperienced in Marco's kitchen,
[01:56.040 -> 01:58.640] and then having in your head that one day I'm going to be a better chef than you?
[01:58.640 -> 02:00.920] Yeah, because he wanted you to. He pushed you to the extreme.
[02:00.920 -> 02:02.000] How did he do that?
[02:02.000 -> 02:05.520] He drummed it in. You know, if you're gonna do it, do it to your best.
[02:05.520 -> 02:09.400] And if you don't want to do it to your best, get the fuck out of here.
[02:09.400 -> 02:11.440] Don't waste my time and certainly don't waste yours.
[02:11.440 -> 02:17.120] And I think it's a lot of life lessons early on because you're getting structured, you're
[02:17.120 -> 02:21.520] getting hungry, you're getting knowledge and all of a sudden you're becoming a beast because
[02:21.520 -> 02:24.280] of the monster he created and the monster you're working for.
[02:24.280 -> 02:28.160] And so I see those environments all the time and I say to the individuals, stay in that
[02:28.160 -> 02:31.200] environment, get what you need and get out.
[02:31.200 -> 02:34.720] And when the shit hits the fan, learn to dance in the storm.
[02:34.720 -> 02:38.960] It's a great place to be in because somewhere down the line, there's going to be a shit
[02:38.960 -> 02:43.880] storm on your radar and you're going to stand tall in that storm and you're going to get
[02:43.880 -> 02:44.880] through it.
[02:44.880 -> 02:49.000] And when the storm would come to you in the kitchen, what was the best way to get out
[02:49.000 -> 02:50.400] of that storm?
[02:50.400 -> 02:51.680] Solution.
[02:51.680 -> 02:56.720] Because I was experienced enough to handle that and I'd know there wasn't any area in
[02:56.720 -> 03:01.320] that kitchen, restaurant, bar, wine cellar that I hadn't tackled.
[03:01.320 -> 03:02.840] And so that's where you go in search of.
[03:02.840 -> 03:05.480] And I knew my weaknesses and that's why stepping
[03:05.480 -> 03:08.260] into Le Gavroche, I'd never baked before.
[03:08.260 -> 03:11.400] But if I'm gonna have my own business, I need to understand how to bake a point poilon,
[03:11.400 -> 03:14.720] a sourdough for catch, I need to understand that.
[03:14.720 -> 03:20.360] But I came out of Harvey's under Marco's tenor, going into Le Gavroche, I was, you know, posted
[03:20.360 -> 03:22.640] to get on the fish and the meat, the top two sections.
[03:22.640 -> 03:26.260] But now I wanted to become a baker because it's one bit that I hadn't understood the
[03:26.260 -> 03:27.540] chemistry of baking.
[03:27.540 -> 03:34.040] So on that trajectory, you've got to still find those weaknesses to enhance, you know,
[03:34.040 -> 03:36.080] that platform to make sure it is solid.
[03:36.080 -> 03:39.740] So when that shit storm comes, you are not depending on anybody because you've got it
[03:39.740 -> 03:40.740] in your itinerary.
[03:40.740 -> 03:44.160] And were you getting arrogant at any point in this period and needing to be slapped down
[03:44.160 -> 03:46.400] or did you remain humble?
[03:46.400 -> 03:48.640] I think arrogant is the wrong word.
[03:48.640 -> 03:49.640] It's called confidence.
[03:49.640 -> 03:52.880] And that's misconstrued to those that are less talented than you.
[03:52.880 -> 03:54.440] Oh, look at that arrogant twat.
[03:54.440 -> 03:58.120] He doesn't like being told, no, dude, I've got my shit together.
[03:58.120 -> 03:59.120] I know my shit.
[03:59.120 -> 04:00.120] You're a dreamer.
[04:00.120 -> 04:07.160] And in this industry, like many industries, there's dreamers that want it, but haven't
[04:07.160 -> 04:13.320] got it to commit, haven't got it with mindset, haven't gone it with their broad shoulders
[04:13.320 -> 04:14.940] and haven't got it in their attitude.
[04:14.940 -> 04:20.940] So yeah, I'm going to put that down to confidence, not arrogance.
[04:20.940 -> 04:21.940] So there you go.
[04:21.940 -> 04:24.480] Gordon Ramsey, welcome to the High Performance Podcast.
[04:24.480 -> 04:28.480] The full episode is out on Monday or it's available right now on the High
[04:28.480 -> 04:31.460] Performance app. I can't wait to hear what people think about this. No, I think
[04:31.460 -> 04:35.000] people are gonna love it and also it's worth reminding you that from Monday you
